Preheat oven to 350 degrees F.Mix together the mashed bananas, sugar, applesauce, vanilla, oil, and soymilk. Set aside.In a larger bowl, combine the flour, baking powder, cinnamon, and coconut. Add the wet ingredients to the dry and stir until it's just combined. Add the carob chips and stir. Spray a loaf pan with nonstick spray and pour in batter. Bake until toothpick comes out clean, about 50 minutes.
Note: I made both a tray of muffins (6 muffins) and a loaf with this batter.
