Ingredients

2 cups dried green split peas
1 large onion, cut up, or 1/2 cup chopped leeks
7 1/2 cup water
2 stalks celery, cut up
1 bay leaf
1 large carrot, cut up
1/4 tsp. thyme
2 tsp. salt
1 tsp nutritional yeast

Instructions
Put split peas, onions, and water in a large saucepan. Bring it to a boil. Simmer until peas are tender, about 45 minutes. Add remaining ingredients. Simmer 1/2 hour or more, until vegetables are tender. Remove bay leaf. Blend in blender, or mash with potato masher. Adjust salt to desired taste. Add water for desired consistency. Garnish with croutons.
You may also add buckwheat or barley.
